Ingredients to make Tomato Soup Recipe
5 Tomatoes, Peeled and Diced
2 Tablespoons Butter
2 Tablespoons Flour
1 Teaspoon Black Pepper
1/4 Teaspoon Salt
2 1/2 Cups Milk
1 Cup Water
3 Sprigs Oregano
8 Basil Leaves
Directions to make Tomato Soup Recipe
Step 1:Scald the Milk in a small pot, set aside.
Step 2:Simmer tomatoes in water with all seasonings, except half the basil leaves for 10 minutes
Step 3:Make a roux in another pot: Combine the flour and butter and cook on low until it turns just blonde and golden. There should be a faint nutty aroma. Allow to cool slightly before proceeding
Step 4:Add the milk in a slow stream, using a hand blender to combine. Now add the tomatoes, and use the hand blender to puree in the pot until smooth.
Step 5:Simmer for another 10 minutes
Step 6:Finish this tomato soup recipe with the rest of the chopped basil as a garnish.
Step 7:A great serving option is to pair with ricotta cheese spread on toast
