Potatoes - 2-3 pcs. (peeled and finely diced)
Broth - 4-5 cups
Pearl barley - 2 tbsp (soaked for 3 hours)
Onions - 1 pc. (peeled and chopped)
Olive oil - 2 tbsp
Parsley to taste (finely chopped)
Salt to taste
Pour the broth to a saucepan, add pearl barley, bring to a boil and simmer for 7-10 minutes.
Add potatoes and cook for about 10 minutes. Salt to taste.
Heat olive oil in a frying pan, saute onions and parsley. Add to soup and simmer 5-7 minutes.
Pour cooked soup in bowls and garnish to taste.
Ready in: 40 minutes.
