vine Leaves with lentils
A staple in most households, vine leaves with lentils are a nutritious and delicious meal that can be enjoyed with rice, bread or even on its own. Versatile and yet greatly loved, vine leaves with lentils are a great appetizer to serve guests to start a meal on a yummy note.
To make vine leaves with lentils, you will need:
1 jar al alali vine leaves washed and drained
1/2 cup crushed Yellow Lentil washed and drained
1 large onion, finely chopped
2 tomatoes finely chopped
1 tomato, sliced
3/4 cup Egyptian rice washed and drained
1 cup extra virgin olive oil
4 tablespoons lemon juice
Parsley, finely chopped
Mint leaves, finely chopped
3 hot or sweet red pepper
1 teaspoon al alali paprika
1 teaspoon al alali ground cinnamon
1/2 cup al alali tomato paste
1 teaspoon al alali ground white pepper
1 teaspoon Turkish coffee (dark) optional
Salt to taste
Step 1: In a large bowl, mix the tomatoes, onions, salt, parsley, oil and the al alali tomato paste. Add in all the spices and give it a good mix.
Step 2: Add the rice and the lentils to this mix.
Step 3: Take a medium sized pot. Place the sliced tomatoes at the bottom of the pot.
Step 4: Stuff the peppers and vine leaves with the mix or the filling.
Step 5: Place the peppers and vine leaves over the tomatoes in the pot. Sprinkle some salt for taste.
Step 6: Add water to the pot and cover it.
Step 7: Cook on high heat for a few minutes, then reduce the flame and allow the dish to simmer for a few more minutes. Now, uncover the dish.
Step 8: Add lemon juice and allow it to simmer till cooked.
Step 9: Let it cool. Garnish and serve.
