Shredded beets with yoghurt
If
you want something that’s healthy and delicious, this dish is for you. This
dish is a great way to introduce beetroots into the diet, even for those who
are not particularly fond of beetroot. In fact, they will love the taste.
To
make shredded beets with Yoghurt, you will need:
2
cups plain low-fat yogurt
400
g al alali Diced Beets drained
1
large clove garlic, crushed with a pinch of salt
2
tbsps. fresh, strained lemon juice
Salt
to taste
al
alali Ground Black Pepper to taste
Pinch
of sugar, optional
Sprigs
of fresh mint for garnish
Coriander
for garnish
Step 1: Coarsely grate the beets to make spaghetti-like strips.
Step 2: In a medium bowl, add the garlic, lemon juice, salt and al alali Black Pepper. Give it a good mix.
Step 3: Add beets and yoghurt. Using 2 spoons to gently toss it. mix the yoghurt and beets.
Step 4: Add a pinch of sugar. You can skip this if you don’t want the dish sweet.
Step 5: Place the mixture in a serving dish, cover and refrigerate for 1 hour till cool.
Step 6:
Garnish with sprigs of fresh mint and finely chopped coriander before serving.
