Spinach Pie with Feta Cheese
This is the ultimate in comfort food. Warm
spinach served with crunchy, flaky phyllo sheets with the sharp hit of feta
cheese, what’s not to love? It’s so easy to make, you’ll want to have it everyday.
To make Spinach Pie with Feta Cheese, you will
need:
2 packs
chopped spinach (cooked- this could be frozen or fresh)
900 g cottage cheese
540 g
crumbled feta cheese
3 eggs
3 finely
chopped spring onions
al alali
Ground Black Pepper
2
tablespoons melted butter
4 phyllo leaves
1 box frozen
phyllo dough
Salt to taste
Step 1: In a large bowl, mix the spinach, eggs,
the feta and cottage cheeses, spring onions and the al alali pepper. Mix
thoroughly.
Step 2: Take a roasting pan. Leave the butter
outside so it softens and now melt it. Add about 4 phyllo leaves to the bottom
of the pan. Brush it with butter.
Step 3: Spread the spinach and cheese mix on top
of this, layering it on thickly.
Step 4: Add 4-6 phyllo sheets on top of this mix.
Layer again with the spinach mix.
Step 5: In a pre-heated oven, cook the pie for at
about 180 degrees for 45 to 60 minutes till the crust turns golden.
Step 6: Remove from oven and let it cool
slightly. Serve and enjoy.
