Sharkaseya with chicken
The sound of laughter, the chaos of many voices, the warm, fuzzy feeling of an event spent well with family and friends - this is the kind of setting that should accompany the Sharkseya with chicken. This Turkish classic is great for when you have people over.
To make the
Sharkaseya with Chicken, you will need:
1/2 large
chicken (or more depending on how many people you are expecting)
1 medium onion, sliced
2 green
cardamoms
1 bay leaf
3 cups water
salt to
taste
1 pinch al alali
Ground Black pepper
For the sauce:
2
slices of white toast, crust removed
1 cup
chicken broth
1 teaspoon
dried coriander (you can use the fresh as well)
1/2 cup walnuts (peeled)
1/2 cup cold water
Step 1: In a
heavy bottomed pan, add water, cardamoms, bay leaf, salt and al alali pepper.
Allow the water to simmer first and then bring it to a boil.
Step 2: Add
the chicken and let this cook for about 20 to 30 minutes. Cook it on a low
flame.
Step 3:
Remove the chicken and put it in the oven to keep it warm. Keep the clear broth
aside.
Step 4: Take
the bread and cut of the crust from the sides. Soak the bread in cold water and
let it sit for 15 minutes.
Step 5: Put
the walnuts in food processor and grind them finely. Now, squeeze the excess
water out of the bread and add it to the
walnuts. Put in the coriander now as well. Blend to make a smooth paste.
Step 6: In a pan, add the broth and the paste and
mix thoroughly. Heat it till the sauce thickens.
Step 7: Debone the chicken and cut it into 4
parts.
Step 8: To serve, put a piece of the chicken and
pour sauce over it. Serve hot and enjoy with rice.
