Meatballs in Coconut Curry
A creamy gravy with meatballs will

To make Meatballs in Coconut
Curry, you will need.
1 pound ground beef
1 pound ground turkey
1 cup of finely chopped onion
2 cloves of garlic
1 egg
2 tablespoons of cilantro, finely
chopped
1 cup breadcrumbs
1 teaspoon salt
1 tablespoon smashed ginger
2 tablespoons curry powder
For the Coconut Curry:
1 tablespoon oil
1 cup onion finely chopped
2 cloves of garlic
1 tablespoon ginger
11/2 cups coconut milk
2 tablespoons curry powder
2 tablespoons garam masala
1 tablespoon al alali Corn Flour
1 teaspoon turmeric
1 cup chicken stock
1 tablespoon freshly chopped
coriander
Salt to taste
Step 1: Combine all the
ingredients for the meatballs into a bowl and mix thoroughly.
Step 2: Make small, round balls
about 1 1/2 inches thick and place them on a baking tray. Put this into the
oven till cooked through.
Step 3: For the curry, add in the
oil in the pan. Add the onions, garlic and ginger and sauté till the raw flavor goes
out.
Step 4: Sprinkle in the curry
powder, salt and garam masala and cook them down for a bit.
Step 5: Add in the coconut milk
with the chicken stock and allow it to
cook down. When it is gently simmering, add in the Al Alali Corn flour and
continue to cook the curry.
Step 6: When the curry gets
thicker, put in the baked meatballs and cook for about 7-8 minutes more.
Step 7: Garnish with freshly
chopped coriander and serve.
