Your wife is very lucky! My neice just married a Chef too, about a year ago. Her only complaint is that she gained some unwanted pounds. As the saying goes, "You can't have your cake and eat it too". Well, maybe once and awhile. :)

The type of chocolate that I love to work with is Dark Chocolate - 70% Cocoa
Less then that is not good
If you are looking for good quality aim for Chocolate - 70% to 99%
Then you get the best of it
