Items that You Require
10 pounds of grapes, 8 pounds of sugar, primary and secondary fermentation vessels, airlock, one stainless steel pot and one pack wine yeast. In addition you will be requiring one Campden tablet, Funnel and straining cloth. All the utensils should be perfectly sterilized with boiled water along with antibacterial shop.

The Steps to Follow

With best care, rinse the grapes and after taking away the stems put them preferably in a stainless steel vessel to crush. Smash them with a wooden hammer and take the juice out.

Use the strain cloth to strain the juice in any large vessel. You need to use a funnel in decanting the juice in a carboy. Mix sufficient water. Please make sure that you have boiled the water and cooled it in room temperature. You should target to make the liquid at the level of 4 gallons. If you prefer a real stronger wine standard, you need to increase amount of grapes. Mix sugar and stir well till sugar is dissolved.

Take three tablespoonful sugars in quarter cup of warm water in a small pot and add wine yeast. Stir well and mix it with the juice in carboy. Place the carboy top along with cork and fix an airlock. Ensure to put the carboy in a cooler place preferably having a temperature around 60 degree F.

You can use Campden tablet as well as yeast nutrient to have a clear result. In addition, use of pectic enzyme is needed. Make sure in measuring specific gravity at the level of 1.03. If required you can add more sugar for this, but every time, do not forget to stir the combination. 

After 30 days, check the wine. In case you find the water of airlock is bubbling, you should understand that wine is not yet ready. Fermentation is on. Till the airlock stop bubbling, check the pot regularly.

It is better to make use of any plastic tube to siphon the liquor in a bottle. Do not take the entire wine up to the tube end. Leaving the bottom of carboy ensures that remaining pulps are left. This will give a better and clearer appearance of your wine. After bottling the wines, cap them well and store. The wild wine is ready, but it will be better to age them to enjoy clearer taste.
