Achari Aloo Recipe for a Save-The-Day Lunch Box

If you may have noticed, potatoes unlike any other vegetable is an extremely popular and multipurpose choice. What do we cook today? A question that haunts every chef of the house can almost always be answered with ‘Make something with aloos’. And to those that resist from eating potatoes considering that it makes you fat should know that potatoes are a rich source of Vitamin C and offers generous amounts of protein, niacin and thiamine.

Anyway, let’s get back from the science mid-ground and head onto the kitchen arena to prepare a delicious Achar Aloo Recipe which is nothing less than an easy snack recipes.

To do so, you will need:

1.      Baby Potatoes boiled and peeled 500 grams

2.      Vinegar 1/4 teaspoon

3.      Mustard seeds 1/2 teaspoon

4.      Fennel seeds (saunf) 1/2 teaspoon

5.      Dried red chillies 4

6.      Mustard oil 2 tablespoons

7.      Cumin seeds 1 teaspoon

8.      Onion seeds (kalonji) 1/2 teaspoon

9.      Turmeric powder 1/4 teaspoon

10.  Garlic paste 1 tablespoon

11.  Ginger paste 1 1/2 teaspoons

12.  Salt to taste

13.  Black salt (kala namak) 1/4 teaspoon

14.  Sugar 1 teaspoon

15.  Vinegar 3 teaspoons


Method:

Step 1: Grind together fenugreek seeds, red chilli, mustard seeds and fennel sides to make a coarse powder.

Step 2: Heat mustard oil in a pan till it begins to smoke. Add onion seeds along with cumin seeds and sauté for about 30 seconds. Next, add turmeric powder, and the boiled baby potatoes to this mix and stir. Now, add ginger and garlic paste and water to this mixture.

Step 3: Add the spices you ground in step 1, black salt, sugar, and salt. Now mix them well. Add vinegar and quarter cup of water and cook till it dries completely.

Serve the dish hot and relish it with friends and family. This recipe takes no more than 6 to 10 minutes to cook and about a maximum of 10 to 15 minutes to prepare. The level of cooking is moderate and the achari aloo tastes tangy. It is the food equivalent to the save-the-day meal as it is not just quick and easy to do but also tastes equally well.

You can also prepare a red chilli garlic chutney or pudina chutney to compliment the dish. Or you can simply eat it with rotis/chappatis/bhakaris or jeera rice. This dish also works as a really good vegetarian lunch recipe alternative for days when you don’t feel like spending much time in the kitchen!
