Avial is a dish that originated from Kerala and equally gained popularity in Tamil Nadu and Karnataka as well. Avial is a mixture of 13 vegetables and coconut with coconut oil and curry leaves. It is an essential part of the main meal and lip-smacking south Indian avial recipe prepared with a lot of vegetables. It consists of mixed vegetables, cooked in coconut gravy and mixed with curd and flavored with oil and curry leaves.

 

Avial is a creamy vegetarian curry that is made with seasonal vegetables. Kerala is known for its beautiful places but it is also that local cuisine stands out for its lip-smacking recipes. The combination of curry leaves fried in coconut oil is poured on top before serving the dish. This food is also served as prasadam in Padmanabhamswami Temple.

 

Avial is served on every occasion whether it is a wedding or festival and paying equal attention to every ingredient. It is believed that Avial was invented by Bhima, one of the five Pandavas, during their exile. There are various ways in which the Avial recipe can be prepared. A variety of vegetables can be used such as eggplant, beans, pumpkin, raw banana, drumsticks, gourds, carrots, cucumber, etc. Coconut milk is also added to give a creamy texture and other spices are added to it.

How to Make Avial (South Indian Avial Recipe) here comes the recipe as:

Prep Time: 15 mins, Cook Time: 15 mins, Serves: 4 persons

 

Ingredients

Drumsticks-1/2 cup, French beans –1/2 cup, carrots-1/2 cup, yam (suran) – 1/2 cup, red pumpkin-1/2 cup, 1 raw banana, green peas- 1/2 cup, brinjal -1/2 cup, turmeric- 1/4 tsp, potato – 3 to 4,curd-1/4 cup, curry leaves- 1spring, coconut oil-1 tsp, Salt to taste, cumin seeds- 1 tsp.

To grind

Coconut -1/4 cup, green chili – 2, Rice flour- 1/2 tsp

 

Method

1. Combine the drumsticks with 1/4 cup of water and cook on a medium flame till half has done.

2. Cut the vegetables into long strips of pieces such as beans, peas, carrot, potato, brinjal, yam, pumpkin, and banana.

3. Add the other vegetables with half-cooked drumsticks and add some water and salt. Mix well and cover and cook for a slow flame till the vegetables are tender for 1o minutes.

4. Grind the coconut, green chilies, rice flour with jeera, and water to make a paste.

5. Add the prepared paste and ¼ cup of water; mix it well for 15 minutes till it becomes dry. Remove from the flame.

6. Add some curd and temper with avial with coconut oil, cumin seeds, and curry leaves for 3 minutes and then serve it.

 

Any lunch meal in South India is incomplete without avial and it is considered as light and coconut-based curry originated from Kerala. Avial recipe is the most nutritious veggies in the recipe and it is popular during summers which are good for a balanced diet.
