Two mouth-watering iftaar recipes that you should try this Ramadan

arrived which means that kitchens all over are prepping for Ramadan recipes. Ramadan is that time of year when all around
you can see the best foods coming out of the kitchens. Kababs, Chicken Masala,
Meat Masala are the flavour of the season. If you’re a foodie, Ramadan is
probably your favourite time of the year.
Ramadan
recipes are rich in spices and condiments. They are heavy and more importantly
nourishing because for those who fast during this period, its very important
that what they eat at iftaar sustains
them and gives them energy through the day.
If you’re
planning to fast during Ramadan this year or just want to indulge your taste
buds with some Ramadan recipes then here are some quick and easy iftaar recipes that will make your mouth
water.
1. Chicken Kebab
Recipe: Wash
chicken and drain water completely. To clean chicken add yoghurt, oil, salt,
lemon juice, garam masala, ginger garlic paste, red chilli powder and diced
onions. Let the chicken marinate for in the refrigerator overnight or for at
least 4 hours. Line the chicken and onions alternately on the skewers. Preheat
the oven to 240 C for minimum 15c to 20 minutes. Place the marinated chicken in
a tray and grill for 15 minutes. After 15 minutes, Flip them and grill for
another 15 minutes. The last 5 minutess, move the tray to the top rack or
broil. At this stage you can brush some ghee or butter over the kababs to give
it a rich flavour. Serve chicken kebab hot with mint raita or green chutney.
2. Kheema Samosa Recipe: Marinate kheema with ginger-garlic paste, red chilli powder, salt, turmeric, coriander powder, curd. Mix well and keep aside for 20 minutes. Heat the oil and add whole garam masala and sliced onions and saute until they turn a golden brown. Add the marinated kheema to the oil and cook well. Add chopped ginger to the kheema. Add the dry fruits (optional). Add salt to refined flour along with oil to make a stiff dough. Portion into small balls. Roll into pancakes. Add the kheema to pancake and shape (crescent shaped). Fry till cooked. For accompaniment,mix hung curd, castor sugar, salt, cardamom powder, rose water and mix well.
