One of the most popular cuisines in Delhi, apart from south Indian and Chinese, is that of north Indian food. The food from North India, are usually characterise by their thick and tasty gravies, use of chillies, saffron, other vegetables. Another defining characteristic is the North Indian cuisines proportionally high use of dairy products, like paneer, ghee, milk and yoghurt and even sometimes items like nuts and dry fruits, in their preparation. These dishes are usually quite heave and filling, and the meals are comprised of several different dishes. 

The meal also comprises of a wide variety of breads like chapatis, rotis, naan, parantha, puris and such, to be have had with the gravy dishes. These breads are usually made using a tawa, for the flatbreads like roti and parantha and for other ones like naan, kulcha and such, a tandoor is used. A lot of north Indian restaurants in Saket and other places, mostly use a tandoor only for their bread preparations. Whereas for the puris and bhatooras, since they have to be deep fried for them a large and deep cooking pot is used called a karahi. 

The cuisine is greatly influenced by the Mughal, Kashmiri and Punjabi styles of cooking and most of the dishes are some sort of variation of these styles of cooking only. Also, the use of dry fruits, nuts and meats and vegetables in this cuisine is widespread, especially for special occasions and events. 

And the best part is that there are few ways to prepare it so, whether one has it at the restaurant only, or tries the many home delivery restaurants in Saket and other locations, one will more or less find the same thing, barring a little in the manner of the taste, and even that is pretty miniscule. The north Indian cuisine is very popular among people of all age groups, working classes, and what not. Most of the time, college students prefer this over any other, since there are a lot of places offering it in budget prices and also a few dishes can be shared among a group, so that one doesn’t have to order an individual dish for every person. 

The north Indian cuisine is also famous for its spices and flavours that are used, in the preparations of the dishes, which is actually what makes them stand out from other cuisines. The use of tomato, garlic and onions are also something that are widely used for north Indian dishes.
