is a side dish actually without onion and garlic which goes well with steamed
rice, chapattis, rasam rice or pulao. So let’s get started.
Ingredients
250
grams or 1 cup of small ladies finger chops
2
tbsp olive oil or any oil
½
tsp mustard seeds
½
tsp split husked black gram (urad dal)
10
to 12 curry leaves (kadi patta)
1
to 2 green chopped chilies, or 1 to 2 dry red chillies chopped
a
pinch of asafoetida (hing)
⅛
tsp turmeric powder (haldi)
2
tbsp freshly chopped coriander leaves (dhania patta)
salt
as per the requirement.
Procedure
First
wash and rinse the ladies fingers and wipe dry with a clean kitchen cloth. Start
slicing the bhindi
to thin rounds and keep them aside. Take a shallow frying pan and
heat 2 tbsp of olive oil. Lower the flame, add ½ tsp of mustard seeds and ½ tsp
of urad dal and saute till the mustard seeds crackle turning the urad dal
golden. Add add curry leaves and 1 to 2 green chillies chopped followed by a
pinch of asafoetida. Then add ⅛ tsp turmeric powder and stir well. Now add
all of the sliced bhindi and sauté well adding salt. Stir properly on low flame
without keeping the pan lid. Keep on stirring and sauting every 3 to 4
minutes interval. When the bhindi fry is done switch off the flame. Add chopped
coriander leaves and stir finally. Serve hot as a side dish with pulao, steamed
rice, chapatti, curd-rice or rasam-rice.
The
entire cooking duration for frying the ladies fingers is 10-12 minutes. Try
