Summer flavors for birthday cupcakes

Summer calls for freshness and a burst of flavors. When it’s hot outside, we like food that is light and can be digested easily. We even like our sugar heavy treats to be light, fresh and tart. Here’s some flavors to try atop your birthday cupcakes during the summer that are super healthy and super fun!

·         Tender coconut

Tender coconut is the delicate crepe like forming in a fresh green coconut. Its jelly like texture is a welcome change from the saw dust like desiccated coconut that we so lovingly gobble up. Cut it in small pieces and adorn your cupcakes with it.

·         Mango

A tropical country treat which is the king of fruits in many countries. Mangoes are sweet but are accentuated with a mellow tartness. Puree them and mix it with icing sugar. The bright sunny yellow will make your birthday cupcakes a treat that you wouldn’t want to share.

 

·         Kiwi

This fruit is a vital source of Vitamin C. Its black seeds are packed with necessary vitamins. A summer treat in the way of a birthday gift baskets laden with dishes made from kiwis comes highly recommended. Use them sliced as a garnish, or puree them and in your cake batter to make tender gooey cakes.

 

·         Goji berries

Give the regular berries like strawberries, blueberries, raspberries, etc. a miss and opt for goji berries that pack a punch. These bright berries look good and are extremely healthy as they are abundant in anti-oxidants. Mixing them in your batter of baked goodies is a good bet.

 

·         Apples

A green apple pie and vanilla ice cream is a treat that we have all grown up with. Combine both the flavors and make frosting out of it for sweet culinary delight. Even as cookies that come packed in a cookie gift basket, this flavor will have you ordering a batch again and again.

 

·         Litchi

A summer fruit that is a must try because it is packed with Vitamin C and is a great boost for your immunity. Litchis can be used pitted or their essence can be used in the frosting of your decadent sugar delights.

 

·         Lime

Say goodbye to lemons and embrace the tang of limes. Instead of a key lime pie try a key lime cupcake. They are much sharper in taste than regular lemons. The juice can always be added to plain frosting to increase its gloss.  These green golf sized balls spell summer out loud and clear.

 

·         Melons

Whether you like watermelons or honeydew or cantaloupes, melons are a summer treat that give you an instant hit of freshness. Puree them and mix them with spices such as cardamom and cinnamon for a spicy and fragrant frosting. These bright colored delights help you get your daily dose of Vitamin A.
