You must be prepared for few flames and a lot smoke to really get perfect with the blackened technique. And personally, I like to prepare my on the grill outside where there's no issue of smoke.
You need three pieces of equipment, to create a blackened crust and also you need a source of intense heat, a cast iron cooking plate or a cast iron skillet and a very thick oven mitt. Do not use a regular skillet or you will mess up the recipe
Since the grill is fired, to accompany the chicken we threw on some corn. Great way to heat up the kitchen or to prepare an entire meal outside when it is just too warm.
This Blackened Seasoning is blended with garlic, yellow mustard, paprika, cumin, cayenne, thyme, onion, black pepper, oregano, bay leaves and celery seed.
1/4 teaspoon cayenne pepper
1/8 teaspoon onion powder
1/8 teaspoon ground white pepper
1/4 teaspoon dried thyme
1/2 teaspoon paprika
1/8 teaspoon salt
1/4 teaspoon ground cumin
2 skinless, boneless chicken breast
I did use a Blackened chicken technique and If you want to make your own blackened chicken that's similar to it, I recommend the recipe for it by All Chicken Recipes.
Here's what you need to do:
On high heat preheat grill and place cast iron on the grill.
Cut each chicken breast to about 1/2 inch thickness - more thinner more they will cook faster.
In a microwave dish, melt your butter and add spices.
In the butter/spice mixture coat each chicken piece and place directly into the hot cast iron pan. Don't use oil to coat the pan with oil. If your cast iron is properly seasoned high heat and quick cooking should prevent sticking.
Cook about 2-3 minutes until outer mixture is charred on each side and chicken is cooked through.
