Easy And Tasty School Lunches for Your Kid

Keeping up with your child’s gluten allergy, especially during the morning hours, is a difficult task. Kids want innovative, fun and novel lunches every day. But how do you go that extra mile without adding 10 minutes to your lunch prep? Here are a few ideas which will help you make quick and yummy gluten-free school lunches for your child:

  1. Breadless Sandwiches

Whatever your reasons are for cutting out gluten, it doesn’t have to mean you cut out sandwiches. What most parents and children miss because of gluten allergy is easy to access to bread. But there are plenty of things available in the market with which you can substitute bread easily. For example, you can make a Chicken and Cheese Sandwich.

It is a simple recipe that is filling, yummy, and gluten-free. You need deli chicken, crisp apple slices, and your favourite sliced cheese. With the chicken slices on the bottom, add a slice of cheese. Place an apple wedge in the centre, and roll it up to create a wrap or a sandwich.

  1. Sandwich on a Stick

It is a fun recipe which even the kids can help you make in the morning. You need some skewers and your favourite veggies, meats, and cheeses. This simple gluten-free meal idea pairs classic sandwich ingredients with the popular kebab serving style. Simply layer deli-sliced meat, chunks of your favourite cheese, grape tomatoes, and pickles on skewers. Serve up with small containers of ranch dressing or deli mustard. The innovative style of this recipe will drive your kids to finish their lunches.

  1. Broccoli Nuggets

As parents, you are always on the run to include green into your child’s lunches. GIIS School suggests transforming the greens into something that looks fun. These broccoli nuggets will be so tasty and cheesy that your kids will forget that it's green in colour. Here’s the recipe:

  • Preheat the oven to 375 degrees.

  • Place broccoli florets inside a food processor and pulse until finely chopped.

  • Add eggs, breadcrumbs, cheese and seasoning to veggie mixture. Process a few pulses until every combined.

  • Use a small cookie scoop to place veggie nugget scoops onto a parchment-lined baking sheet. Gently press them down, so all nuggets are the same height.

  • Bake for 20-25 minutes until the tops are golden. Remove from the oven and allow them to cool slightly before serving.

  • Store leftovers in an airtight container and refrigerate up to 3 days.

  1. Lettuce Wraps

Crisp Ice Lettuce is a wonderful substitute for gluten-filled bread. Mix up your favourite recipe for chicken salad and use large leaves of iceberg lettuce in place of bread. Drop a dollop or two of the chicken salad mixture in the middle of the lettuce leaf, and roll it up.

  1. Chicken Burrito Bowls

You can easily reuse leftovers and make your child eat a variety of foods all at once with these burrito bowls. You can add chicken or veggies over a warm bed of rice with some dressing, and your child will love it.

Gluten-free lunches do not have to be boring. You can try making these recipes with your child as a fun activity too.
