Ghee doesn't go bad easily if you take certain care. Indian people are already accustomed to its smooth and slightly granulated texture. When exposed to direct sunlight, ghee can go bad easily. Direct sunlight on the ghee jar for a longer time can oxidize the ghee and make it spoil easily.
When ghee is made the lactose and casein parts are removed and the water portion evaporated. It is mostly saturated fats, and monounsaturated fats. Ghee is sensitive to moisture and you should be aware of the fact. Don't use a wet spoon to take out ghee and never dip your hand in the ghee jar.
The benefits of ghee are known to all. Cow ghee has an astonishingly long shelf-life. You can store ghee at normal room temperature for at least one year from the date of manufacturing. Never use a ghee past its expiry date. If you notice an odor, sour taste, or mold in the ghee, immediately discard it. If you are dealing with homemade ghee then you can store it in the freezer for a longer shelf-life.
