As per AGMARK, allyl isothiocyanate should be within a range of 0.25 to 0.60. AGMARK rules suggest that the iodine value should be within 98 to 110.

As per consumer affairs test, check certain things before buying. They are: The containers of mustard oil should have certain specifications they are: Name of the oil, type and grade of the material. Quantity of the material in the container should also be mentioned. The name of the manufactures and recognized trade-mark, if any needs to be there at the pack. Batch number or lot number along with the month and year of manufacture and best before period has to be mentioned.
