What is kefir? How they are prepared, and what are several benefits of it?  You might have heard of kefir milk and wondered: what is this probiotic milk? Well, the name of this probiotic milk comes from the Turkish word “keyif” that refers to the “good feeling” an individual get after they have consumed this fermented milk product. Due to the growing interest in gut health and probiotics, it has only recently started gaining popularity in Australia.  This post briefly explains the benefits of this probiotic milk and why it is an excellent source of calcium and probiotics.

Different Types of Kefir Grains

While Kefir probiotic milk is traditionally made from the milk of a cow, it can also be produced from the milk of other animals such as sheep or goat. Moreover, it can be produced from non-dairy milks also.

How Is This Probiotic Product Made?

One of the main differences between kefir and yogurts is the method of production of this probiotic milk. It is small gelatinous beads that appear like grains that contains different types of yeasts and bacteria. The grains are soaked in a glass bowl or jar of milk. It is covered and left at room temperature for a period of 24 hours (minimum). It allows the yeast and bacteria to ferment the lactose into lactic acid, which will efficiently activate the bacterial colonies to grow and proliferate. The grains are strained from the solution after 24 hours and transferred to a fresh batch of milk.
