Process of Malt Manufacturing

Basic steps of malt manufacturing involves:

1- Harvesting: The first step in manufacturing malt is Gathering, Cleaning, and Drying. Malt makers known as maltsters use all kinds of grain but barley is most popularly used.

2- Soaking: Soaking also known as Steeping involves submerging the grains in water. Soaking starts with soaking grains in water and then air drying the same at regular intervals.   The enzymes activate the chemical changes as the grain absorbs water. These enzymes help in speeding up the complex molecules such as carbohydrates and proteins present.

3- Germination: After reaching a specific moisture content, malt makers remove the excess water so that sprouting can begin. The step of germination takes place for the speeding up of the malting process as it makes the grain enzymes more active. The availability of starch in grains is converted into sugar such as disaccharide maltose, maltodextrin and monosaccharide glucose. 

4- Drying: In the fourth step, the process of drying takes place in which with the help of air and heat, the chemical transformation of malt is halted by the maltsters. This step preserves the germinated grain in its new state while keeping the right combination of sugar, starch and protein. 

5- Roasting: In this step malt is roasted in the oven or kiln to provide additional heat to the malt to create further changes in the nutritional element of the grain. It also helps in fixing the flavours and colours. After this step, it is examined, stored and packed.
