Different Recipes with Kesar

Kesar, also known as “Saffron” is one of the most prestigious and expensive spices in the world of cooking. Kesar is one the most famous spices not only India but around the world. It has been primarily used in most of the Persian, Arabic and Turkish cuisines and is one of the most loved spices in Indian cuisines as well.  Those red vivid stigmas add a perfect golden hue, rich aroma and an exotic taste to the delicacies.

Indian cooking is all about those aromatic and flavor-some spices that are capable of adding a unique taste and a pleasant aroma. Kesar is one such exquisite spice that is essentially used by simply soaking the saffron thread in hot water or milk for some time and add it just before your final cook to intensify the flavor.

1)   Kesar Biryani

Biryani is one of those classic Indian rice dishes which include mixed spices such as cardamom, ginger, pepper, cloves and a dash of kesar is used to enhance its flavor and aroma. Kesar biryani is a flavorsome layered Indian dish, famous in Hyderabad and Lucknow.

For Kesar Biryani- Just add few saffron strands into hot milk and keep it aside for about 10-15 minutes and add this mixture to your biryani just before the final cook.

TIP: Kesar would not release its flavor in a dish already having butter or ghee, so a better way is to soak it in warm milk to completely release its flavor.

 

2)   Kesar Thandai

One of the perfect drinks during festivities like – Shivratri and Holi. Kesar Thandai is a refreshing summer drink with lots of Cashews, Almonds, Milk, Sugar, Rose Water, and full of spices such as Cardamom, Fennel Seeds, Cinnamon and last but not the least kesar which adds a little earthy and savory flavor.

This rich thick creamy drink is packed with good health, including the best of the power boosting ingredients with a balanced flavor of Indian spices and nuts.

For kesar Thandai – Soak few strands of kesar in hot milk for some time and add this mix to your Thandai after the recipe is complete for an extra punch of flavor.

 

3)   Kesar Kheer

Every Indian celebration is incomplete without Kheer, and with kesar it makes it more appealing and adds a nice soothing flavor.

Kheer is one of the most popular sweet dishes in North Indian Cuisine  and is usually made with Rice, Fat milk, Sugar and spiced with some Cardamom Powder and lastly garnished with nuts and kesar for that subtle flavor.

 

4)   Kesar Pista Kulfi

Kesar Pista Kulfi reminds me back of my school days, when Kesar Pista Kulfi was one of the “must have” in summers after school.

Kulfi is another most popular and traditional Indian dessert which looks more sort of an ice cream however, it is creamier and rich in flavor which makes it even more luscious.

Kesar Pista Kulfi is made with Full Cream Milk, Sugar, Kesar soaked milk, cardamom powder and lastly garnished with some pistachios and Kesar for that exotic flavor.

 

5)   Ras Malai

One of the most famous Bengali desserts Ras Malai is such a melt in your mouth recipe. Made from Cottage cheese (Paneer) and thick saffron milk.

Kesar adds a perfect yellow color to the recipe and an elegant taste to this wonderful dessert. Delicious soft and juicy dessert drenched into chilled creamy milk makes it an ideal dessert for scorching summer days.
