Delicious Easter Sample Meal Plan with Recipes

With the onset of spring, Easter is just around the corner. If you are planning to throw an Easter Sunday brunch at home, there’s no need to spend the entire morning in the kitchen. We have some delicious, fool-proof recipes that you can make easily with a meal-prep. Consider this sample meal plan for an amazing Easter lunch.

Appetizers -

Zucchini Corn Cakes: Mix some grated zucchini, corn kernels, salt, pepper, ground garlic, thyme, basil, flour, parmesan cheese. Scoop the batter and shallow fry in olive oil until golden brown. Serve with a side of minty Greek yogurt dip.

Easter Crostini Platter: Top up grilled crostini with carrot hummus, with sundried tomatoes and basil leaves.

 Herbed Hot Cross Buns: Mix vegan butter, coconut sugar, nutmeg, milk, chia egg, flour, yeast, lemon zest, rosemary, thyme and a pinch of salt. Add the wet mixture in the dry mixture. Form a pliable dough and prove for 2 hours before forming small balls. Grease a baking tray and place the buns. Use a diluted pancake batter to pipe cross shape on the buns and bake at 350 degrees for 30 minutes.

Honey Glazed Carrots: Blanch some baby carrots in boiling water. To make the glaze, add honey, sugar, rosemary, salt, pepper in a jar and shake well. Sauté some garlic in olive oil and add the tender carrots. Pour over the glaze and coat oil.

• Rosemary Potatoes: In a baking tray, add halved baby potatoes. Drizzle with olive oil, salt, pepper, and rosemary. Bake at 350 degrees for 30 minutes. Garnish with fresh rosemary leaves.

Mains - 

• Spring Mushroom & Zucchini Risotto: Prepare this healthy brown rice recipe that is hearty and delicious. Soak rice for 30 minutes before cooking. Sauté a few garlic cloves, zucchini, chopped porcini, button mushrooms in olive oil. Add parmesan, salt, pepper, thyme, lemon zest, and rosemary. Add the rice and ladle in some vegetable stock. Keep adding the stock until the rice is fully cooked. Garnish with fresh lemon zest.

• Lemon & Peas Gnocchi: You can use store-bought gnocchi for this recipe. Sauté some garlic, thyme and green peas in olive oil. Add the gnocchi with few knobs of butter. Cook for 10 minutes. Garnish with chopped mint and lemon zest.

Desserts - 

• Carrot Cupcakes: In a bowl, mix 400 g of almond flour, grated carrots, vanilla seed paste, unsweetened applesauce, a pinch of ground ginger, 1 tsp of cinnamon, 1 tsp of allspice mix, honey, chia egg and 1 tablespoon of olive oil. Pour in the cake batter in greased silicone cupcake molds. Bake at 350 degrees for 30 mins. Pipe some maple cashew cream cheese frosting and pecan nuts.

• Lemon Pavlova with Fresh Berries: Prepare a fluffy meringue and place in a baking tray. Bake at 450 for 30 minutes. Layer the pavlova with some lemon curd. Garnish with some macerated strawberry, raspberry, lemon zest, and mint.
