Delicious Brunch Meal Plan for July 4th Independence Day Celebrations

Independence Day weekend is just around the corner and celebrations are in order. If you are planning a get together with your family and loved ones on the 4th of July, we have some great appetizer and dessert ideas for you. These easy and delicious recipes are the perfect treats to serve on July 4th weekend: 

Zucchini Fritters: Mix some grated zucchini, salt, pepper, ground garlic, thyme, basil, flour, parmesan cheese. Scoop the batter and shallow fry in olive oil until golden brown. Serve with a side of minty Greek yogurt dip.


Mushroom & Thyme Risotto: Prepare this healthy brown rice recipe that is hearty and delicious. Soak rice for 30 minutes before cooking. Sauté a few garlic cloves, chopped porcini, button mushrooms in olive oil. Add parmesan, salt, pepper, thyme, lemon zest, and rosemary. Add the brown basmati rice and ladle in some vegetable stock. Keep adding the stock until the rice is fully cooked. Garnish with a few fresh thyme sprigs. Use Daawat brown basmati rice for this recipe.


Caprese Skewers: Caprese is a much-loved Italian salad. Start with assembling the ingredients into bowls. Stack the bocconcini, cherry tomatoes, and folded basil leaves into bamboo skewers. Drizzle a bit of balsamic vinegar, extra-virgin olive oil, and sea salt. Serve cold in a beautiful serving platter.


Rosemary Potatoes: In a baking tray, add halved baby potatoes. Drizzle with olive oil, salt, pepper, and rosemary. Bake at 350 degrees for 30 minutes. Garnish with fresh rosemary leaves.


Veggie Kebabs: Start with chopping thick slices of capsicum, onion, cottage cheese, tomato, and zucchini. Stack the veggies into bamboo skewers. Make a summer spice mix with olive oil, lemon juice, salt, pepper, and zaatar. Brush the spice rub on the kebabs. Grill in a hot grill pan until cooked. Serve with fresh mint chutney.


Lemon & Peas Gnocchi: You can use store-bought gnocchi for this recipe. Sauté some garlic, thyme, and green peas in olive oil. Add the gnocchi with few knobs of butter. Cook for 10 minutes. Garnish with chopped mint and lemon zest.


Carrot Cupcakes: In a bowl, mix 400 g of almond flour, grated carrots, vanilla seed paste, unsweetened applesauce, a pinch of ground ginger, 1 tsp of cinnamon, 1 tsp of allspice mix, honey, chia egg and 1 tablespoon of olive oil. Pour in the cake batter in greased silicone cupcake molds. Bake at 350 degrees for 30 mins. Pipe some maple cashew cream cheese frosting and pecan nuts.


Lemon Pavlova with Fresh Berries: Prepare a fluffy meringue and place it in a baking tray. Bake at 450 for 30 minutes. Layer the pavlova with some lemon curd. Garnish with some macerated strawberry, raspberry, lemon zest, and mint.
