A Chef? you're a chef? Could you write up simple and easy to fix meals for one or two... or your favorite dressings or sauces or?

Yes... I am a chef.

What should I suggest. The list is so long... A grandmother of 8!! Wow!!! That;s some achievement. Now what do I teach you?

I would like to suggest that you give up cooking (for yourself) which use the medium oil... Frying, Grilling and Roasting. Instead take up methods where food is cooked by dry haeat or water - baking, broiling, boiling, poaching, steaming, stewing, braising.... And would strongly like to recommend at least 30 min of walking each day, if not twice a day.. Don't wait for a doctor to tell you this... He will eventually.

My favourite recpe....

Prep Time: 5 Minutes
Cook Time: 30 Minutes
Ready In: 35 Minutes

Makes: 4 servings

To serve, place chicken on top of hot cooked rice on each plate and spoon sauce over the top. Wonderful served with steamed asparagus.

Ingredients

1 cup orange juice

1/2 cup dry white wine

1/2 cup maple flavored syrup

2 teaspoons chopped fresh rosemary

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

4 skinless, boneless chicken breast halves

2 tablespoons butter

2 tablespoons olive oil

Directions

1. Bring orange juice and wine to a boil in a small saucepan. Reduce heat slightly, but keep high enough to continue a low boil for 5 minutes, stirring occasionally. Stir in maple syrup and continue boiling for another 5 to 6 minutes, stirring frequently, until glossy and just slightly thickened. Set aside.

2. In a small bowl mix together the rosemary, salt and pepper. Rub mixture on both sides of chicken breasts, and set aside.

3. Melt butter and olive oil in a large skillet over medium high heat. Add chicken breasts, cover skillet and saute for about 5 minutes on each side until lightly browned. Pour orange-maple mixture over chicken (mixture will boil and bubble). Reduce heat to simmer; cover and let cook for another 10 minutes, basting occasionally, until chicken is cooked through and sauce has turned into a rich, thick glaze.

Fish in paper-

Preheat oven to 375 F (175 C). Grease inside of roasting bag and put it on a baking tray.

Using a food processor, blend butter, parsley, chives, shallot, black pepper and dried cayenne pepper.

Spoon the butter onto a plate and allow to set. Cut butter into 1/4 inch chunks. Set aside.

Wash salmon with water. Place fish inside the roasting bag and top with the pineapple and chunks of butter. Carefully roll up the bag opening in the direction of the top of the bag to keep in the heat, prevent the juices from leaking and to ensure a good blending of flavors.

Bake in the oven for 45 minutes. It may similarly also be cooked on a barbeque. Serve hot garnished with parsley sprigs, accompanied by a salad.

Hell Anand,
I think your chicken recipe sound so easy & good!! I have all the Ingredients except the wine so I will get that next time at the store.
I do not like to cook but, this sounds so simple even I could do it!!

It is simple and very effective... Wine does give it a bite!! If you know what I mean.

My fish recipe too is simple and healthy.. Just put it in a paper bag and bake... Give bothe of them a shot and pl let me know about the outocme!!!

Teaching is a two way process. Unless the student has shown results, it is not completer.

I am a good cook yet I dislike cooking! :)
Silly isn't it. I did used to love it.

I think I'm too interested in other pursuits at the moment.
So cooking time would take me away from those.
