I've been experimenting with the new "Ideal" no calorie sweetener for a few months now. Some of the baked goods I made came out good but are on the dry side so I've been tweaking recipes to get a better result. This one came out delicious so I thought I'd go ahead and share it. It does contain a small amount of sugar, so these are not completely sugar-free.
1 1/2 cups all purpose white flour
3/4 cup Bob's Red Mill whole ground flaxseed meal
3/4 cup oat bran (I use Trader Joe's)
3/4 cup Ideal brown sugar
1/4 cup (packed) regular brown sugar (dark or light)
2 tsp. baking soda
1 tsp baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 cup shredded sweetened coconut
3/4--1 cup dried cranberries (or raisins if you prefer)
1 cup pomegranate seeds (or chopped nuts)
Mix these ingredients together in a large bowl
3/4 cup milk (any kind you prefer)
2 eggs
1/3 cup unsweetened applesauce
1 TB canola oil
1 tsp vanilla
Beat these ingredients together. Add to dry ingredients and mix just until blended--do not overmix. Bake 350 for about 15 minutes or until a pick inserted comes out clean.
Makes 15--18 muffins.
