Wholesome Breakfast Recipes to Keep You Fuelled on Busy WFH Days

Summer mornings start early, but not always when you are at home all day. Work from home days can be busy and managing to cook a healthy breakfast can sometimes feel like a chore. Even though you are at home, you shouldn’t skip breakfast. A great way to save time is to meal prep some breakfast casseroles and bake it in the oven. Check out these easy, nutritious, and delicious breakfast recipes that will keep you energized on workdays:

Rice & Millets Porridge 

A warm bowl of porridge with some toppings is the best way to start the day. Ready in minutes, this is one of the easiest breakfast meals that you can prepare. Start with boiling 1 cup of basmati rice and millets in water. Add 1 tablespoon of maple syrup for natural sweetness. Add some shredded almonds, vanilla paste, 1 tsp of cinnamon, and cook it for 10 minutes. Add your choice of plant-based milk in the porridge. In a separate pan, add 250 gm of fresh strawberries, 1 tablespoon of maple syrup, and a splash of water. Add 1 tablespoon of chia seeds and keep stirring till it turns into a compote. Pour the porridge in a serving bowl and top it with the fresh berry compote. Garnish with a dollop of coconut yogurt, fresh mint, and serve warm. You can also use your favourite toppings like almond butter, chocolate, coconut flakes, nuts, seeds, etc. 

To increase the absorption of basmati rice nutrition, soak the rice for 1 hour. Soaking always increases the absorption of nutrients. If you are wondering which basmati rice is good, choose Daawat rice. 

Breakfast Bruschetta

Toast two slices of sourdough bread. Drizzle some garlic-infused olive oil. Take a dollop of the guacamole and serve on top of one toast. Garnish with some red chili flakes. Chop up some cherry tomatoes and basil leaves. Add a layer of hummus on the toast, drizzle a little olive oil and top it with the tomato salsa. Serve the toasts with some tea. 

GF Banana Bread

Start with caramelizing the banana in a pan with some maple syrup, star anise, cinnamon, and whole vanilla bean pod. Add mashed ripe bananas to the gluten-free bread batter and top it with the chocolate chips. You can replace normal flour with almond flour. Bake until a toothpick inserted in the loaf comes out clean. Serve warm with your choice of the homemade preserve. 

These delicious breakfast recipes are sure to wake you up to the energetic start of a productive day. You can also do some meal prep for quick breakfast dishes. For a more balanced breakfast meal, add some fresh fruits and juices.
