Making pizza dough

01. Pour lukewarm water to a mixing bowl.

02. Dip your finger and ensure the water is warm and not hot.

03. Hot water kills the yeast so avoid it.

04. Add yeast and sugar to lukewarm water and stir it.

05. Set aside for 10 to 15 minutes and allow to proof.

06. After 15 minutes the yeast should activate and turn bubbly or frothy.

07. If the water doesn’t turn frothy by then, the yeast is inactive and cannot be used for the dough.

08. In this case, discard and start afresh with lukewarm water, sugar, and yeast.

09. When the water turns frothy, add flour, salt, and oil.

10. Next time mix and make a dough adding more water if needed.

11. Knead the dough very well until very soft and pliable for about 5 to 7 minutes.

12. The dough must be soft and elastic.

13. When you press down the pizza dough with your finger, it must dent and bounce back.

14. Apply a thin layer of oil to the bowl and the dough as well. Keep covered with a greased plate.

15. Move this to a warm place like a shelf in your kitchen.

16. Allow the dough to rise and double in size. It may take anywhere from one and a half to three hours depending on the weather conditions.

preparing pizza sauce

01. Meanwhile, prepare the tomato pizza sauce.

02. To make a sauce, heat oil in a pan and saute garlic until it smells good.

03. Then add red chili flakes and then onions if using. Saute until they turn slightly golden.

04. Add tomatoes, salt, and sugar. Stir and continue to cook covering partially as it splatters a lot.

05. Cook until the sauce thickens. Add herbs and crushed pepper.

06. Mix and taste the sauce.

07. If needed add more salt, herbs, and chili flakes to suit your taste. Set this aside to cool.

08. Now rinse and cube the veggies. Separate the layers of onions.

01. Preheat the oven to 240 C for at least 20 to 25 minutes.

02. Transfer the dough to the work area.

03. Punch the dough once to deflate it. Cup to 2 to 3 portions.

04. Gently shape it to a ball.

05. Sprinkle some cornmeal over the pizza tray.

06. Place the pizza dough over the tray and flatten it slightly.

07. Include scarcely any drops of oil and start to straighten it. Spread to a round plate of wanted thickness.

08. If making a thick base and you own a small oven, then put the base in the oven and bake it for 5 to 10 minutes.
