Jeera Powder: An Indigenous Aromatic Condiment

Collection Of Raw Materials

Cleaning Of Jeera Seeds
The jeera seeds are cleaned by passing through the vibratory pre-cleaning machine. Here the bigger impurities are removed by the continuous vibration of the jeera seeds. Many gravels and large crumbs of woods are removed at this stage.

Magnetic Separation
In this process, the metallic contaminants are removed through a magnetic separator. The raw seeds are passed through this machine to filter out the metallic remnants present if any in the jeera seeds. This is an important step as metal contaminants may cause injury to the user.

Seed Sieving Machine
For one final time, the jeera seeds are again sieved to remove the fine impurities present in them. While harvesting and gathering to loading in bags, the dust, soil particles, plastic pieces, and many smaller pieces of wood go unnoticed. They are segregated here.

Drying
The jeera seeds should be properly dried to remove excess moisture from them. This helps in stretching the product life and prevents contamination of fungus and other microbes into the product. The process of drying involves passing the jeera seeds through a hot air dryer.

Grinding
The dried seeds are now ready for grinding. They are passed through a spice grinder to grind the seeds into a powdered form. On an average 100kg of cumin seeds are ground by the machine in small-scale enterprises. It could be higher in medium and large-scale industries.

Sieving
The powdered jeera seeds are now sieved under a sieving machine to remove the larger particles from the fine powder. The larger and unground jeera is again passed through a grinder to get a finer version that is suitable for packing.

Packing
Once the fine powder is obtained, it is ready for packing into smaller units. Food-grade plastic packs are used for packing the jeera powder. The packed units are also sealed by heat sealers to retain the product’s aroma and exposure.
