Miso Glazed Eggplants

Cut some long slices of eggplant. To make the marinade, mix honey, thyme, salt, tamari, miso paste, and pepper. Brush the miso glaze and grill the eggplants until char marks appear. Gnocchi in Pumpkin Sauce

You can use store-bought gnocchi for this recipe. In a processor add roasted pumpkin, garlic, salt, pepper, olive oil. In a pan, sauté the gnocchi with a knob of butter. Add the pumpkin puree and fresh sage leaves. Serve the pasta in a bowl with crispy sage leaves. Serve warm with some crusty sourdough bread.

Sweet Potato Hummus

In a food processor add the peas, salt, pepper, roasted sweet potato, lemon juice, and olive oil. Serve with a drizzle of olive oil and fresh lemon zest. This dip is best served with pita, lavash crackers, and vegetable sticks.
