The menu at NIBS is interesting and authentic based on the freshest ingredients from the region. Chef Cuatepotzo reinvents traditional dishes — ceviches with coconut and lime, lobster with green mango salsa, shrimp burritos, tuna tatar, red snapper and conch fritters.

The tropical atmosphere of the area is reflected in NIBS´interior through an original mural by Eduardo Kobra (Brazil), a waterfall, fruit trees and monochromatic walls accented by walnut chairs and Italian marble tables designed especially for the hotel.


Before starting his career (2009) with Pujol as Catering Manger under the direction of Enrique Olvera, Alejandro worked in major city hotels like Camino Real, NH, Fiesta Americana Grand and Capella Pedregal in Los Cabos. Olvera trusted Cuatepotzo with the kitchen at Moxi, his restaurant in Playa del Carmen – San Miguel de Allende. During his tenure working with Chef Olvera, Moxi was nominated as the best kitchen in a hotel boutique by Travel and Leisure (2013). Today Moxi is a destination for gourmands travelling to San Miguel de Allende.



Chef Alejandro´s style of cooking is always consistent and infused with the spirit of Mexico, utilizing regional ingredients and bringing local products to the table.
