Easy Meatball Recipes to Bring to Your Next Work Potluck

It's time again for another work potluck, and the excitement of it has everyone in the office putting together a list of what each person is going to bring. Are you a chef extraordinaire in the kitchen and make extravagant dishes that everyone will ooh and aah over? Or are you the kind who prefers to bring foods that are quick and easy to make but still taste amazing? If you're in the second group, here are some easy recipes using Farm Rich meatballs you can make that will wow the crowd at your next work potluck. 

Meatball Kebabs

"Kebab" isn't just a fun word to say…it's also a fun meal to assemble. Kebabs can include any cubed meats and thickly sliced vegetables that you like, such as onions, bell peppers, and mushrooms. But instead of the traditional cubed meats like chicken and beef, you can change things up and use meatballs instead. Although this is easy to make, it does take a bit of time to cook as you have to grill, but your coworkers will rave about your dish, so the extra effort will be worth it. Don't forget to include some dipping sauces to go with your kebabs, such as those with a base consisting of yogurt, avocado, balsamic vinaigrette, among others. 

Meatball Bites

Equally fun to make are meatball bites. These are similar to kebabs except the wooden stick is shorter, making it an easier food to grab and with less commitment because it's not loaded like a kebab. You can choose any variation of foods for the meatball bites. Some ideas include melting a slice of mozzarella cheese and topping it off with a basil leaf; adding a cherry tomato and lettuce to make a BLT; or combining the meatball with vegetables like mushrooms or bell peppers. 

Cheeseburger Sliders

Going away from dishes using the kebab stick, cheeseburger sliders are also a great dish to bring to a potluck as their small size doesn't take up the entire plate, so cheeseburger fanatics can still get their cheeseburger fix. Use small dinner rolls, add a meatball per roll, and include extras like sliced tomatoes, cheese, and pickles. Since cheeseburger sliders are almost bite-sized, you can make a large batch of it and offer a variety of cheeseburgers to include veggies and some only with meat and cheese. And don't forget the all-important condiments like ketchup and mustard. 

Slow Cooker Meatballs

This dish is the easiest of all these to make and takes very little effort but will still be a winner. In fact, the simplest form of this dish only uses two ingredients—a sauce of your choosing and frozen Farm Rich meatballs—tossed in the slow cooker. You can use your favorite, all-time, go-to BBQ sauce or combine some of your favorite sauces to mix with the meatballs. Make sure you use a stirring utensil that's not sharp when mixing the ingredients, so you don't pierce the meatballs and break them. This dish can be assembled in the morning on the day of the potluck and set to high or low, depending on when you eat so that the meatballs can soak in the caramelized sauce. Remember to check it often and stir, rotating the meatballs from top to bottom, so the ones at the bottom don't get burned.
