Breakfast and Dinner Are Sorted With Soy Milk!

We’re all concerned about the environment and one great step that many people are taking is swapping their dairy milk coffee order for a drink containing plant based milk. With the wide variety of non-dairy alternatives available — from oat to almond milk — it’s no surprise that coffee addicts are contributing to the rapid growth of the plant based milk market.

However, it’s not only your morning coffee that can benefit from the substitution of a non-dairy alternative. Soy milk is a fantastic product that can be added to all of your favourite recipes, lending a sweet, creamy flavour and plenty of essential vitamins and minerals.

We’ve put together two recipes — one for breakfast and one for dinner — to show the awesome power of soy milk.

Breakfast
Many of our favourite breakfast foods use milk as a base. Soy milk can be easily substituted for regular dairy milk in all situations, whether you are enjoying a bowl of cereal or making your favourite smoothie recipe.

Fluffy vegan pancakes
Serves 12

Ingredients:
● 1 cup flour
● 1 tbsp sugar
● 2 tbsp baking powder
● ¼ tbsp salt
● 1 cup soy milk
● 2 tbsp vegetable oil
● Your choice of toppings — strawberries, almonds, lemon, sugar, chocolate — go wild!

Method:
1. Sift the flour in a medium sized bowl.
2. Add the sugar, baking powder and salt. Mix until well combined.
3. Add the soy milk and mix until the batter is smooth and free of lumps.
4. Meanwhile, heat a medium sized fry pan on the stovetop.
5. Add the vegetable oil.
6. Drop ¼ cup of the batter into the fry pan. When bubbles appear on the surface, flip and cook the other side.
7. Serve topped with your favourite sweet or fruity treats — enjoy!

Dinner
We don’t often think about soy milk as being a good addition to our favourite dinner recipes. Out of all the non-dairy milk alternatives, soy milk has perhaps the mildest flavour, which makes it an excellent option when it comes to substituting for regular dairy milk. Try this recipe for yourself to see!

Creamy garlic pasta
Serves 4.

Ingredients:
● ½ tbsp olive oil
● 4 cloves garlic, minced
● 1 shallot, finely chopped
● 2 cups vegetable stock
● 2 cups soy milk
● 2 tsp salt
● 400 g dried pasta
● Pinch of black pepper, dried oregano, and red pepper flakes
● Chopped fresh basil, to serve

Method:
1. Heat the olive oil in a deep pan over medium heat.
2. Add the garlic and shallot with a sprinkle of salt. Cook for two minutes, stirring well until both ingredients are starting to brown.
3. Add the vegetable broth, soy milk, and the rest of the salt. Mix well.
4. Add the dried pasta and submerge it completely under the liquid.
5. Bring the mixture to the boil and then reduce to a simmer.
6. Cook for approximately 20 minutes, until the sauce has started to thicken.
7. Season with the black pepper, dried oregano, and red pepper flakes, to taste.
8. Top with fresh basil — enjoy!
