In the western and southern region of India, peanut oil is used mostly but in the areas along the western coast, such as Kerala make use of coconut oil. Some other oils have been used in the Indian cuisines are hydrogenated vegetable oil, also known as Vanaspati ghee, desi ghee, or butter based ghee.

The spices are the life of the Indian cuisines, and Indian food is well-known with the abundant use of the spices and flavorings. The spices used in the Indian cuisines includes chilli pepper, cardamom, cinnamon, clove, coriander, cumin, garlic, ginger, turmeric, black mustard seed, and asafoetida. The Indian cuisines also use the leaves for flavoring. The leaves used in the cuisines are bay, coriander, curry, fenugreek, and mint leaves.

Not only this, Indian weddings are known for the sweet dishes,  and these are infused wit the essence of cardamom, nutmeg, saffron, and rose petals. The sweet dishes are especially fried foods which are made with the sugar, milk, or condensed milk and ingredients varied with a region.
