Chime In With Your Favorite Egg Recipes!
Most professional cooks will tell you that mastering the egg can be a tough project... Most of us usually go the east route and scramble 'em once a day, and never even give a second thought to their versatility... Eggs form the basis for many sauces, desserts and main courses.
That little hen-fruit can make or break a baker's heart when it comes to making even the most simple stuff, like browies... put the egg in the mix at the right temperature, or they'll turn into bricks! LOL!
I like savory dishes in the main, so I'm going to share one of my own with you fine folks, please feel free to post your egg recipes goodies when you comment below! :)

Poached Eggs On Toasted English Crumpets
----------------------------------------
6 extra large eggs
6 Crumpets (Or English Muffins)
6 Slices of Gruyere cheese
6 fresh basil leaves
1/2 stick of butter
Salt and Pepper to taste
1 cup water and one cup white wine for poaching
------------------------------------------------
Coat the sides and bottom of a frying pan with butter and pour in the water and wine, turn on the heat and add salt and pepper to the liquid as it comes to a boil.
Lower heat to a simmer and carefully add each egg (Crack them open first, Silly!) into the liquid, simmering for about 2-3 minutes or until the yolks are covered.
Meanwhile toast your crumpets or muffins under a broiler until each is lightly browned the place one pat of butter and one slice of cheese on each.
Place crumpets on a serving platter and place one poached egg on top of each, adding adding a dot of butter, if desired, and garnish each egg with the fresh basil leaves.
Serve immediately. Make sure that this dish is served while hot so that the cheese will be delightfully gooey when your guests put their forks into it!:)

I love eggs~
My favorite is WAY too simple and fast.
2 farm fresh eggs
1-3 T. fresh tomato salsa
1/2 handful (more or less) of freshly shredded cheddar or use soy cheese for those dairy intolerants
1/4 handful (more or less) of freshly shredded mozzarella
(optionals) a few sliced olives, mushrooms, diced potatoes, any color bell peppers, diced onions, scallions, chopped tomatoes, broccoli florets, zucchini, refried beans, basically any fresh veggie except maybe green beans -LOL
