Balsamic vinegar production has evolved over generations of family tradition and skill. Some people think the first batch of balsamic vinegar was created accidentally, as a result of chance events. It is assumed that a small number of cooked grapes, or "must," was neglected and later discovered. It had gone through a natural acetification process over time (a process of conversion to acetic acid or vinegar). The aged vinegar had developed a thick texture and a sweet-sour flavour.

The manufacturing of balsamic vinegar is now a sophisticated technique that has undergone years of scientific development. It uses grape "must," or unfermented juice. For red sauvignon, the Trebbiano variety is utilised, and for white sauvignon, Spergola. This "must" is patiently cooked in copper pans over a direct, open flame. It is boiled until the liquid inside has been cut in half, producing a thick fruity syrup. Sometimes the vinegar's "mother" is added at this phase. On the surface of the vinegar, a slimy substance made of yeast and bacteria develops. A different option is to additionally add the longer-aged balsamic vinegar. The acetification process is aided by this.
