The commercial ovens are available in different types such as standard or conventional ovens, range ovens, convection ovens, deck ovens, combination ovens, conveyor ovens, cook and hold ovens, rotisseries and many more. Let’s know in brief about some of these types:
Types Of Commercial Ovens- Standard Ovens - They use natural convection heat for cooking food. Due to the natural heat flow, they are ideal for precision cooking. The natural flow within the oven cavity reduces its impact on delicate food products like the meringues, pastry shells and pizza puff. However, they can be used to prepare almost all types of food items, be it bread, cakes, pies, meat, poultry products or any other bakery items. They are the least expensive of all the ovens available.
- Range Ovens - These general purpose ovens are the most commonly used standard ovens. The cooking is done with the help of atmospheric gas burners that are located below the oven’s cavity. They basically contain a range system and single oven cavity and are mostly used for cooking on smaller scale. They usually come with a pan and support rack.
- Deck Ovens - They are just like the conventional roast ovens but their inside cavity has a low height. The bottom of each compartment is called deck and the burners located beneath the deck are used to supply heat. The ceiling, wall and floor of the oven absorb the heat quickly and radiate it evenly in a slow manner. And for this, they are usually made of brick, steel, ceramic and other materials. They can very quickly cook a variety of foods including meats, casseroles, fish, etc. They are available in free standing and stackable configurations.
