Chicken Masala powder is used to make Chicken Curry, a popular delicacy of India. Chicken Masala Powder is collection of all the spices which are necessary for making smacking Chicken Curry, if you do not have access to fresh and pure spices in raw form use Majithia Chicken Masala powder. Take Coriander seeds 2 tablespoons, Cumin seeds 3 tablespoons, Fennel seeds 2 tablespoons, Pepper corns 1 tablespoon, 5 whole Red Chilies, Black Mustard seeds 1 tablespoon, Turmeric powder 2 teaspoons, Grated dry Ginger or Ginger powder 1 teaspoon, 15-20 Curry leaves, 10 Cloves, one-forth teaspoon Fennel seeds and 2 sticks of Cinnamon.

Take a flat Frying pan and heat it, now one by one roast all the ingredients separately, do not roast Turmeric powder and Ginger powder. Roast spices on a low or medium flame, so that they get roasted from outside as well as inside. Once all the spices are roasted let them cool down, add ginger and turmeric powder and grind them to form a powder. Store this in an airtight container for future use.
