Canning at home is an incredible way to preserve the taste of fruits and vegetables at the season’s peak and enjoy them all year long. The canning method uses high temperatures to keep fresh foods in jars and kills inactive enzymes and microorganisms responsible for spoiling food. Heat removes the air and creates a vacuum seal as the jar cools. The absence of the air within the can keeps yeast and bacteria from flourishing, saving the food from spoilage.

Canning initially seems intimidating to beginners. With dozens of canning recipes and warnings about spoiled food, beginners often get overwhelmed. But you no longer need to worry, as we have made canning simpler in this guide. Whether you are interested in canning blackberries or rhubarb sauce, you can do it at home with two methods.

Water bath canning

The method requires a large pot of water to submerge jars and vacuum seal them. Filled jars are placed in a water-filled pot with water covering them at least one inch, and water is then boiled for the recommended period as per the recipe. The process is typically used for high acid foods with a pH of 4.6 or below, including berries, apples, peaches, pears, pickled vegetables, and BBQ salsas and sauces. Some foods, such as dates, bananas, melons, papayas, tomatoes, and more, need lemon juice or vinegar for water bath canning. It’s best to check the recipe before you begin canning.

Pressure canning

The canning method requires a pressure canner that includes a specialty pot, a rack insert, and a lid with a pressure valve. Unlike water bath canning, a small amount of water is required for pressure canning. Fill the pot with water only up to a few inches and place the filled jars inside it. Cover it with the lid and create a seal. Turn the heat on and wait for the temperature to rise above the boiling point. Doing so is crucial because C. botulinum spores can’t survive above 240 degrees F. The rising temperature will also create steam and build up the pressure. The pressure canning method is beneficial for low-acid foods, including green vegetables, legumes, poultry, meat, and seafood, to mention a few.

Canning is not advisable for overripe vegetables and fruits because they may spoil. Instead, use fresh produce and preserve them in peak condition. It’s best to gather your ingredients and equipment before you start; otherwise, it may increase the chances of spoilage. Whether you are canning blackberries or rhubarb sauce, follow the recipes and use authentic canning jars, either Ball or Kerr, rather than mason jars. Do not consume foods if you notice bubbles or mold when you open jars, as they might not have sealed properly.
