Once again, vegan cookies are quite popular, and, this year, along with soup and chili were especially popular. I'm happy to see some of my personal favorites also top the list! Because its so easy to make a large batch, meatless chili is popular at potlucks and parties, and of course it freezes well.           Vegetarian Black Bean Chili Recipe                             A vegetarian and vegan black bean chili recipe. Using pre-cooked black beans makes thisvegetarian chili recipe super-easy and relatively quick to make. Perfect for a cold winter night.                                                                                                                         Ingredients:1/2 onion, diced2 cloves garlic, minced3 tbsp olive oil1 15 oz can of black beans1 15 oz can of tomato sauce2 tsp cumin1/4 tsp cayenne pepper1 tsp chili powdersalt and pepper to tastePreparation:Sautee onions and garlic in oil until onions turn clear, about 5 minutes.Carefully add tomato sauce and black beans and reduce the heat to medium low. Add spices and stir to combine well.Cover and allow to simmer at least 20 minutes, stirring occasionally.                           " Whatever Floats Your Boat" Brownies!                                                            These are absolutely the chewiest, moistest, fudgiest brownies ever! I have tried adding so many different things to the batter, and they ALWAYS comes out great. They are also great without ANY add-ins! BUT by varying the add-ins, you can make different brownies every week (or day!!) SUPER EASY PREP! So, add "whatever floats your boat" and you will not believe how yummy they come out oh, and the recipe doubles just fine--use a 9 x 13 inch pan instead and add a few more minutes of baking!                                                        Ingredients1/2 cup butter, melted1/2 cup unsweetened cocoa1 cup sugar2 eggs2 teaspoons vanilla1/2 cup flour1/4 teaspoon saltWHATEVER FLOATS YOUR BOAT1-2 cup chocolate chips (semisweet, white, butterscotch, peanut butter) or raisins or chopped maraschino cherry or chopped nuts or M&M' or Reese's pieces or miniature marshmallowDirections  1Preheat oven to 350?F.2Grease an 8 inch square pan or line with foil.3In a medium bowl combine melted butter and cocoa and stir until cocoa is dissolved.4Add sugar and mix well.5Add eggs one at a time and stir until well combined.6Stir in vanilla, flour and salt until you no longer see any flour (do not overmix).7Fold in "WHATEVER FLOATS YOUR BOAT"!8Spread in pan and bake for approximately 25 minutes.9DO NOT OVER-BAKE -- your brownies will come out dry. Adjust time/temp accordingly for your oven. If you do the knife/toothpick test, it should come out with moist crumbs, not clean.10Cool completely before cutting into squares.11For vegetarian omit the marshmallows.12For double recipe, bake in 9x12 pan and add 5 minutes to baking time.                                                                                                                                                            Gingerbread (For Cookies or a Gingerbread House)    This dough is very easy to work with. We use this gingerbread to make our annual gingerbread houses. One recipe makes 3 fair sized gingerbread houses. This is also works excellent for gingerbread people.                                                                                                                                        Ingredients1/2 cup sugar1/2 cup molasses1 1/2 teaspoons ginger1 teaspoon allspice1 teaspoon cinnamon1 teaspoon clove2 teaspoons baking soda1/2 cup margarine1 egg, beaten3 1/2 cups all-purpose flourDirections1In a medium saucepan, heat sugar, molasses, ginger, allspice, cinnamon, and cloves to boiling, stirring occasionally.2Remove from heat; stir in soda (it will foam up).3Stir in margarine till melted.4With a fork, stir in egg, then flour.5On a floured surface, knead dough till mixed. Divide dough in half, wrap half with plastic wrap; set aside.6Roll half the dough, with a rolling pin, slightly thinner than 1/4 inch.7Cut with cutters.8Bake at 325F on a cookie sheet for 12 minutes; cool on a wire rack.9Makes about 3 dozen 3" gingerbread people.10NOTE: We make houses by cutting out our house design (the 2 sides of the roof, two sides, a front and a back of the house) on graph paper, and then placing the graph paper shapes on the dough and cutting the dough shapes out with a knife.
