Some of these are dry while others are wet. Some contain an extreme rub of salts while others may be a bit tangy due to the use of natural vinegars.

  • Color:

The very first element of importance is the color of the dried meat. Biltong is good enough if it has a dark outer layer and dark red inner core.

Very dark from outside to inside is not a good indication. This means that biltong has been sitting for too long and has turned extremely dry. And the dry meat could be lacking the flavors, which may not be exactly what you want.

Therefore, viewing the color of the biltong from inside to out is very important.

  • Drying Process:

Another very important factor to consider is the drying process and time of the biltong preparation.

Biltong which takes a bit longer to dry naturally is generally tastier than the one prepared rather quickly. This would be mentioned on the pack of the biltong you purchase.

Or else, you can ask the manufacturer or the seller about the kind of drying process involved to prepare the same.

  • Fat Content:

Fat is yet another component that influences the quality of the biltong. In a good quality biltong, the fat is kind of translucent and slightly dark yellowish in shade.

And the color or the fat indicates the cut of the meat portion too. Silverside or top side are considered the best cuts and these contain negligible fat content. Presence of a greater content of fat may turn the meat rancid.
