April is here and with that comes the month of festivals and ceremonies. Be it Ugadi, Gudi Padwa or Navratri. However, for someone celebrating any of the three - fasting comes as a no brainer. And if you are up for trying out something fun, delicious and easy to cook - these fasting recipes for Ugadi can work wonders.

Sabudana Khichdi: Tapioca Pearls can be flavoursome and yet so very simple. It’s a popular dish for Indians during the fasting season. Here’s how you can try your hands on the same.

Step 1: soak sabudana with water and keep it aside for overnight. Use the 1:1 ratio for the same, for instance, 1 cup sabudana will require 1 cup of water for soaking. 

Step 2: Drain off any excess water from the sabudana next day using a colander.

Step 3: To prepare the khichdi, add oil in a pan on medium heat and when hot, add cumin seeds and allow them to sizzle for a couple minutes.

Step 4: Next add diced potatoes and cook for 3 to 5 minutes. Stir it often until they are almost cooked. 

Step 5: Now, add raw peanuts to the pan and stir until all ingredients mix well. Next, add green curry leaves and cook for a minute before you saute it with your choiced flavours.

Step 6: To add spice and taste to your sabudana khichdi add red chilli powder, salt and a pinch of sugar. Now, add the drained sabudana to the mix and stir well to ensure all the spices are spread out evenly across the khichdi.
