Who does not like to eat apricots? They are very helpful for our body and helps in providing good nutrition that helps to improve our health in many ways. The best apricots are said to be released by turkey.

Turkey releases a total of 82% of the total Turkish dried apricots and have a huge trade of supplying in the world. Most of the production as well as the supply is from this place. However it is such a delight to eat such delicious apricots. There is no other competition for this and the production and takes is simply beat here.

The dried apricots need a suitable climate to be grown. Most Turkish dried apricots are produced in Malatya region. This region is famous for its dry content.

There are different types of classifications of the Turkish dried apricots

Sulphur Dried Apricots

These apricots are treated with sulphur di Oxide which provides retention of colors and also ensures a long shelf life. The color of the apricots slowly turns from light yellow to orange.

The amount of sulphur di Oxide can be adjusted as per the demands of the buyers.

Natural Dried Apricots

Natural Dried Apricots slightly differ from the sulphur dried apricots. The color of the natural dried apricots changes from light brown to dark brown. This apricot requires to be dried under the sun without any need of sulphur to be applied on it.

As the apricots have more than these varieties certainly there harvesting is also different. The apricots need a certain type of attitude, ripening, as well as the soft was of the apricots must also be maintained. Under thesecircumstances the sweet and juice apricots are been made. The best harvesting is done via hands as this makes a safe harvesting too. The other two types of harvesting are done either by shaking and flapping.

The next part is the drying part. Drying as we have already discussed above is of two types, sulphur drying apricots and natural dried apricots.

With sulphur drying apricots, it is a very short process and also adds color to help preserve it from big and also adds a longer shelf life. With the help of sulphuring the total drying of apricots under the sun is reduced by 80%. Whereas, spreading apricots on the ground under the sun is a natural process which takes more time and there are no added colors and preservatives in it. The disadvantage of this type of drying is that it gets covered with dirt and bruises being kept under the sun for natural drying. Though these apricots are delicious to taste however one needs to be careful before having it.
