Industry Analysis of Potato Chips vs. Banana Chips

Chips are the most popular snacks and are consumed all around the world by the people of all age groups from all income segments. Potato and banana chips are all deep-fried or dried slices. Crispy, crunchy and delicious, whether it's potato chips or banana chips, they are the most popular processed food items resulting in substantial value-addition and simply irresistible. Both banana and potato chips offer some nutritional value, potato chips contain less carbs than banana chips, and banana chips have a few nutritional advantages over potato. But remember to enjoy them in moderation because of their high fat content. Although fresh bananas and potato are much healthier, they can not be saved for a long time.

And the market consumption volumes in this five-years period increased with a CAGR of 3.3%, to reach a total of 3.051.6 million kilograms in 2012. The global potato chips market is expected to reach a value of USD 32.510.5 million at the end of 2017, while the performance of the market is forecast with an anticipated CAGR of 4.8%.
In comparison with potato chips industry, the banana chip industry will continue to grow in the future, and the competition is not as fierce as in case of potato chips industry. To be more competitive, there is a need to further improve the production efficiency, improve packaging and promote branding for the selling of high quality banana chips.

Manufacturing Process
Potatoes/bananas should be washed thoroughly in water, peeled and sliced by potato cutting machine or banana slicing machine. Then banana slices should be put in brine water to avoid oxidation and potato slices just need put in water or the water containing 0.05 percent potassium metabisulphite to avoid oxidation. Sometimes, turmeric/ginger powder is also used for coloring the banana chips or to improve color. Then blanching, the potato slices are blanched for 3-5 minutes in 70-90 degree Celsius hot water, but the banana slices require less time. After blanching, excess water is removed by the potato/banana chips de-watering machine (centrifugal force) and the chips are then fried in edible oil. Coconut oil is generally used to fry banana slices while sunflower oil is commonly used to fry potato chips. After de-oiling and seasoning, the chips are packed in polythene bags and sealed for preventing spoilage. Suggest to use packaging materials, rather than in bulk sales, as delicate packaging is more attractive to customers.
