ilFornino Ovens as the Basis for a Custom Brick Oven.

by Silvia A. Chef
Let’s face it. If you have the space, time and budget, a custom wood fired pizza oven clad in brick or stone is a very imposing site. There are endless styles that can add tremendous value to one’s home. They are designed to last for generations. There are several approaches to accomplishing such a unit and are typically; build the oven from scratch, or purchase a modular insert that, while incorporating the proper internal shape, require additional layers to complete the oven. Today, I would like to discuss a third way to accomplish this, and yield similar results with less time, less materials, and less cost.

The ideal oven to integrate into your pizza castle or cathedral is the Platinum Series.  Its six-inch Refractory Ceramic Fiber Insulation will mimic the heat retention of a build from scratch oven.

What are some of the advantages of an ilFornino oven insert?
1 – Less materials:
The internal oven is much lighter weight than a fully fabricated brick oven. In a typical build from scratch, it is necessary to support it with a very heavy set of bricks and iron as a base. The base needs to be insulated properly from the oven floor. Even if you use pre-fabricated components, they too are extremely heavy, especially when you add the other required layers of insulation and brick.

2 – Quicker time to completion:
Traditional methods force your to fabricate some or all of the internal oven parts, not only will it take you more time to complete your project, but also you won’t be able to enjoy any pizza until the project is fully completed. From the moment you start your oven construction, you will not be able to enjoy your oven until it is complete and cured by successive increasing heating cycles. By utilizing an ilFornino oven, you can use the unit as soon as it is placed upon the base.  When you consider that building an outdoor oven is usually done in warmer weather, it would be a shame to lose all that time without enjoying wood fired pizza.

3 – Longevity of the internal parts of the oven:
The stainless steel inner and outer parts of the oven, as well as the encapsulated ceramic fiber, protect the oven from cracking and leaking that may occur in a full brick oven.  There is no need for a carefully controlled breaking in period.

The selection of the ilFornino oven will dictate the dimensions of your final unit.  Based on the requirements of your outdoor space, you must consider work area, and other options that you would like to enjoy. Wood storage is a must, while an outdoor fireplace (see above image) may not suit your needs. Incorporating a barbeque, and other elements are all up to you.
Once you have mapped out the area, it will have to be excavated and a reinforced concrete support base should be laid to insure long-term level support. Supporting walls and a top that acts as the oven’s base needs to be fabricated, as well. At that stage, the ilFornino oven is positioned with enough space to incorporate a larger custom flush platform to rest pizzas on. Make sure you design allows for the extra overhang.

4- Quicker heating oven:
ilFornino ovens are know for their rapid heating. You will find that you use less wood and get cooking in a shorter period of time.
Since the oven is fully complete, only the application of bricks are required to completely encapsulate the unit. You may want to modify the chimney by encapsulating it in a brick surround, as well.

I hope that this has inspired the creativity in you to create a treasured air loom for yourself and your family. The sky is the limit, but the results can be a reality within reach, by reducing the ultimate cost and time to completion.
