Looking for a good healthy meals recipe that you can use for the entire family on special occasions? It is quite easy to rustle up easy healthy meals without difficulties, even in a fast-paced hectic modern scenario where most people do not have adequate time to whip up meals as per their own desires. One of the top healthy meals recipes that you can consider is Butter Chicken with Nutralite. This is really tasty, healthy and filling at the same time. You can definitely consider the same whenever you require easy healthy meals for lunch or dinner on a special occasion or event.

You should first make the incisions using a sharp knife on the chicken breast and leg pieces. Get hold of chicken which is approximately 800 grams in terms of weight. Apply a mixture of a teaspoon of Kashmiri red chilli powder along with a tablespoon of lemon juice and salt for chicken before keeping aside for 30 minutes approximately. Hang a cup of yoghurt in a muslin based cloth for roughly 15-20 minutes for getting the additional water removed from the same. Add in a teaspoon of Kashmiri red chilli powder and salt along with four tablespoons of ginger-garlic paste and two tablespoons of lemon juice along with ½ teaspoon of garam masala powder and two tablespoons of mustard oil.

Apply this specially created marinade to chicken pieces and keep them well refrigerated for about 3-4 hours. Put the chicken onto the skewers before cooking it on the moderately hot Tandoor or even your pre-heated oven (200 degrees Celsius) for roughly 10-12 minutes or till it is almost completed. Baste the same with Nutralite before cooking for another couple of minutes. Remove it and set aside and for cooking the Makhni gravy, heat 3-4 tablespoons of Nutralite in a pan. Add 2-3 green cardamoms along with four cloves, 6 peppercorns and an inch of cinnamon. Saute this for two minutes, add in two tablespoons of ginger-garlic paste and five chopped green chilies. Cook for about two minutes, add in two cups of tomato puree, a tablespoon of red chilli powder and ½ teaspoon of garam masala powder in addition to salt and a cup of water.

Bring this to the boil, lower heat and simmer for roughly 10 minutes. Add two tablespoons of honey or sugar and ½ teaspoon of powdered Kasoori Methi. Add the cooked chicken to this mix. Simmer for 5 minutes before adding a cup of fresh cream and Nutralite spread right before serving with paranthas or naans.
