Famous Indian snacks with a twist

The lure of Indian street food is enough to make anyone want to take a bite. Stuffed samosa curry buns

  • Biscuit dough
  • 4 mashed potatoes
  • ½ cup peas
  • 2 tsp. olive oil
  • ½ tsp. curry powder
  • ½ tsp. turmeric powder
  • ¼ tsp. red chili powder
  • ½ tsp. coriander powder
  • 1 tsp. melted butter
  • 1 tsp. chopped cilantro
  • Salt to taste

Heat 2 teaspoons of oil in a skillet. Add peas and spices to the skillet and sauté for 2 minutes. Add the mashed potatoes and let it cook. Once the mashed potatoes look cooked or after 2 minutes, turn off the heat and remove the peas and potato mixture onto a separate utensil. This mixture will serve as the filling inside your samosa buns. Once the filling has cooled, stuff it into the dough and make round balls or bun like shapes. Place these balls of dough in an oven and let them bake at 375 degrees Fahrenheit for 12 minutes. The dough should turn golden brown as an indicator that your samosa buns are done. Remove them from the oven and slather some butter on top to further complement the taste. Serve hot with the dip of your choice.

Pizza uttapam

  • 1 cup dosa batter
  • 6 tbsp. pizza sauce
  • 1 ½ tsp. oil
  • ½ cup thinly sliced onions
  • ½ cup thinly sliced capsicum
  • 6 tbsp. grated mozzarella cheese

Heat a non-stick pan and grease it with ½ teaspoon oil. Pour a large spoonful of dosa batter onto the pan and spread it in a circular motion. Once one side looks cooked, flip the uttapam and allow the other side to cook. Now that we have our base take it off the pan and spread 2 tablespoons of pizza sauce evenly on one side. Sprinkle onion, capsicum and 2 tablespoons of grated cheese evenly on top of the pizza. Place the pizza uttapam in an oven and heat it until the cheese melts. You can also achieve the same result by heating it on a non-stick pan. Once the uttapam is out of the oven, cut into 4 equal parts and serve hot.
