Extra virgin olive oil is the purest of the pure oil which is uncorrupted and has all the flavours of olives which are harvested freshly. It has no defects in it. It is indeed one of the most expensive of all the oils. After a robust chemical test and the oral test made by International Olive Council, this oil is launched in the market for consumption.

Types of Extra Virgin Olive Oils

There are different high qualities of extra virgin olive oil in India. Depending on the variety, taste, type, peroxide and acidity there are different products.

Coupage and Monovarietal – Firstly based on the type of oil they can be differentiated into coupage and monovarietal types. A coupage is a type of oil which is made using different olive juices mixed together for getting a special taste and liquid. It is considered as one of the purest, exclusive and conventional oil. The monovarietal on the other hand is also obtained from the juice of a similar olive oil type.

Colour Attributes- On the basis of colour, olive oil can be differentiated in between different shades of gold and green.  Based on the content of carotene or chlorophyll the colour is varied in the oil. The best olive oil available in India does not compromise on its quality on the basis of the variations in the colour.

Taste Attributes- Extra virgin olive oil comes in a variety of tastes as well. These are as follows:-

·         Fruity taste – This type of oil is made from fresh olives which are green. It spreads out a healthy and fresh aroma.
·         Apple taste- This oil gives the taste and aroma of apples.
·         Grass taste- This oil tastes and gives us remembrances of olive grass and leaves.
·         Almond taste- Almond tasted olive oils can be associated with the sweetness it spreads and the aroma of dry fruits. However one must take care of choosing this as it has huge similarities with rancid oils.
·         Hot taste- The olives with which these are made are picking during the early onset of the season.
·         Bitter taste- Using green olives these are made.
·         Sweet taste-The sweet oil does not offer a bitter, hot or any taste which gives an astringent sensation.

They comprise of antioxidants which helps reduce the formation and spread of free radicals in the human body. The onset of gallstones is also reduced by consuming the oil regularly.
