Vanilla Butter Cream Icing

Decorate cookies or cupcakes for holidays, birthdays and parties with a simple egg-free buttercream frosting. When you need coloring to icing, use color paste. If you use liquid coloring, you may need to add more confectioners' sugar.

Ingredients:

  • 1/2 cup butter softened

  • 1/2 cup shortening

  • 1 teaspoon vanilla extract

  • 4 cups confectioners' sugar

  • 2 teaspoons milk

Preparation:

  • In a large bowl, mix butter, shortening, and vanilla extract together. Blend the mixture with confectioners' sugar, remember 1 cup at a time. Beat in the milk, and continue mixing until the soft, fluffy mixture is not obtained. Keep icing covered untill it is ready to decorate.


Mint Buttercream Frosting with Dark Chocolate Glaze

If you are planning to make a Mayonnaise Cake. If your cake contains a chocolate base, double its taste with dark chocolate glaze. The cake and frosting are rich enough to cut the unsweetened chocolate taste. For increase your taste buds, pour some glaze in the middle of the layer too.

Ingredients:

  • 4 cups confectioners' sugar

  • 1/2 cup butter, softened

  • 1/8 teaspoon salt

  • 1 teaspoon mint extract

  • 4 tablespoon milk

  • 1 ounce unsweetened chocolate

  • 2 tablespoon butter

Preparation:

  • In a large bowl, gently mix 1 1/3 cups of sugar, 1/2 cup butter, and salt. Blend mint extract, remaining sugar and butter in a mixture. Gradually stir remaining milk into frosting until you get the desired consistency.

  • Melt unsweetened chocolate and 2 tablespoons butter in a microwave. Double the glaze if required.

  • Frost cake. Pipe a frosting scallop at the top edge of the cake to keep the glaze from dripping down the sides of the cake. Pour the glaze over the cake.

Special Buttercream Frosting

This recipe makes an ideal buttercream for icing cakes and decorating them with borders.

Ingredients:

  • 2 cups shortening

  • 8 cup confectioners' sugar

  • 1/2 teaspoon salt

  • 2 teaspoon clear imitation vanilla extract

  • 6 fluid ounces heavy cream

Preparation:

  • Cream shortening until feathery. Add confectioners' sugar and continue creaming until well blended

  • Blend whipping cream, salt, and vanilla extract on a slow speed until moistened. Beat at a high speed till frosting is fluffy.
