Clay or brick pizza ovens look like what you’d expect to find in the Italian countryside and are generally what most people envisage when pizza oven springs to but, but bear in mind that that clay or brick ovens may be subject to cracking if they aren’t built correctly. The elements can be quite hard on these materials, especially since they ovens are often kept outdoors completely exposed to the elements. In order to minimize the likelihood of cracking, these types of pizza ovens must be cured over a period of 5 days gradually, which can be a hassle. 

When compared to the
portable stainless steel pizza oven, the clay and brick ovens take much longer to make, but you do have the flexibility to make it as large or as small as you like. Buying a clay or brick oven in a kit form will take some of the headache out of the assembly process, however, it is still a lot more time consuming that a portable stainless steel pizza oven.  I’d advise making a clay or brick oven from scratch unless you have bricklaying experience as it can be quite tedious and time-consuming making the dome especially. The last thing you need is for the dome to collapse when lighting your first fire!


 


As for heating, note that the clay and brick ovens take several hours to heat up, so you have to plan ahead before cooking. These types of ovens are not portable, so they cannot move with you. If you build your clay oven into your patio, that is where it will stay. This also means that you cannot move it if rains so you’ll be stuck out in the rain making pizzas for your guests.
